I never really learned how to cook when I was younger. I was born in the nineties and pretty much lived off Marmite sandwiches, turkey dinosaurs and potato smiles as a kid. This was partly because I was a fussy eater and partly because my mum worked full-time and chucking some frozen potato waffles in the oven was about all she had the energy for at the end of a long day (she never learned to cook either so didn’t realise how quick and easy cooking meals from scratch could be). So, if, like me, you never quite got the hang of preparing good-quality food for yourself at home, this section is all about upping your kitchen game, helping you understand flavours, showing you how to make both nutritious and delicious meals, inspiring you to try new dishes and getting you excited about food again.

I didn’t learn how to cook properly until a few years ago. I’d started doing all the other adult stuf – changing lightbulbs, taking electricity readings, submitting my tax return … but I’d still never learned to cook. Sure, I could chuck a load of vegetables in a pan and call it a stir-fry and boil a couple of eggs without too much trouble, but my fear-based relationship with food had meant that the less adventurous I was in the kitchen, the easier it was to control what I was eating. As my relationship with food improved, I found that sourcing ingredients, preparing food and cooking meals helped me to reconnect with the enjoyment of eating. I started to experiment with recipes at home, got cooking lessons when I travelled to different countries, hosted dinner parties and slowly taught myself how to cook. Okay, so I burned some stuff and made a heck of a lot of mess along the way, but after plenty of practice, I have created my ‘Fear-Free Recipes’ section to save you time, mess, dry cakes and burnt cookies, and to show you the basics so you can create delicious and healthy meals.

I’ve developed these recipes with five things in mind: pleasure, nutrition, practicality, connection and tradition. I have been inspired by traditional meals eaten by people in the Blue Zones (see here), and spoken to friends from all over the world to learn about their favourite family meals, all the time being mindful of nutrition science to ensure the recipes help you get all the nutrients your body needs. I have created recipes that avoid common complaints (the main ones seem to be: ‘faddy’, ‘overpriced ingredients’, ‘time-consuming’, ‘pretentious and patronising’, ‘not realistic for working people’, ‘unoriginal and unexciting’).

So, the recipes you will find in this book aren’t faddy or time-consuming, you can get all the ingredients fairly cheaply in your local supermarket and they are family-friendly. They are inspired by lots of cultures, flavours and ingredients, and there are lots of different options depending on how much time you have, who you’re cooking for and what kind of food you fancy.
